Part of the Savoring Series, which is one of my favorite series of books about Regional Cuisine, Savoring Tuscany is a beautiful book filled with sumptuous recipes and delectable writing about the cuisine and culture of Tuscany. As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine.
Recipe - Tuscan Potato Salad

"My favorite summertime potatoe salad. Stores well, can be made in advance, does not spoil as quickly as mayo based salads, and of course, taste fab."
Tuscan Potato Salad
Recipe Submitted by Peter Timmons.
3 pounds peeled, cubed, and cooked potatoes
1 small sliced red onion
4 crushed garlic cloves
1 cup ricotta
2/3 cup grated Parmesan cheese
1/2 cup olive oil
1/2 cup chopped fresh parsley
6 tablespoons herb vinegar
1 teaspoon Dijon mustard
Combine all the ingredients. Chill for at least four hours before serving. Can be served chilled or at room temperature.
