Savoring Tuscany : Recipes and Reflections on Tuscan Cooking

Part of the Savoring Series, which is one of my favorite series of books about Regional Cuisine, Savoring Tuscany is a beautiful book filled with sumptuous recipes and delectable writing about the cuisine and culture of Tuscany. As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine.
Recipe - Tuscan Cream Cheese Spread
"Spectacular with Tuscan or Italian bread - especially toasted or grilled baguettes and fresh juicy tomatoes."
2 (8 ounce) packages cream cheese, softened
2 teaspoons chopped garlic
1 teaspoon salt
1 (14 ounce) can artichoke hearts, drained and chopped
1/3 cup chopped black olives
8 green onions, chopped
3 ounces sun-dried tomatoes, softened and chopped
1/4 cup chopped parsley
1 tablespoon chopped fresh chives
In a medium bowl, mix cream cheese, garlic and salt; stir and blend in artichoke hearts and olives. Add green onions, tomatoes, parsley and chives; gently mix together. Refrigerate for several hours or overnight to blend flavors. Serve chilled or at room temperature.
Makes 8 servings.
