Part of the Savoring Series, which is one of my favorite series of books about Regional Cuisine, Savoring Tuscany is a beautiful book filled with sumptuous recipes and delectable writing about the cuisine and culture of Tuscany. As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine.

Thai Shrimp and Rice Salad

Recipe Submitted by Patchara Pornpipatpong.

2 cups cooked jasmine rice
3 minced fresh Thai chile peppers
3 tablespoons mashed dried shrimp
3 tablespoons minced peanuts
2/3 cup sliced cucumber
1/2 cup minced fresh cilantro leaves
1/4 cup minced fresh mint leaves
1/4 cup fresh lime juice
1/4 cup Thai fish sauce
2 teaspoons sesame oil
2 tablespoons peanut oil
1 tablespoon palm sugar
Freshly ground black pepper
1/2 pound cooked medium shrimp
Lettuce leaves (optional)

Mix together all of the ingredients. Serve warm or chilled on lettuce leaves.
