As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine. |

| |  Recipe - Cucumber and Peanut Sauce by Michael Humphrey
Try this yummy and easy to make sauce with a variety of fresh vegetables for dipping, with fried noodles, or with simply prepared chicken, pork, beef, or seafood.
Cucumber and Peanut Sauce
Recipe Submitted by Michael Humphrey.
Ingredients:
¼ medium cucumber ¼ cup of water 2 tablespoons of vinegar 1 tablespoon of sugar 2 tablespoons of unsalted roasted peanuts fish sauce
Preparation:
1. Peel cucumber and scoop out seeds and finely chop the flesh. 2. Chop the peanuts or finely crush them.
Method:
1. Mix the chopped cucumber with water, vinegar and sugar, stirring over a medium heat until the sugar is dissolved. 2. Add the peanuts and stir. 3. Add fish sauce to taste.
